A short maceration, with little extraction by light pumping over, gives way to a 6 month maturation in stainless steel and concrete tanks. If you are looking for a typical Cahors wine, this may not be the one for you, but if it is a nice thirst-quenching wine, fruity and fleshy, you will be delighted. With no added sulphites, it is a light and digestible wine, intended for early consumption.
