Just like the its sister cuvée "Pineau d'Aunis", this wine was harvested in two batches so has to benefit from two different stage of grape ripeness. September grapes showcased harmonious golden-green skins, beautiful acidity and low sugar content whereas the October grapes, riper and more roasted, had orange-colored skins and a higher sugar content. Accordingly, winemaker Jean-Bernard Metais vinified and aged the batches separetely, 12 months in one-year-old barrels and 14 months in five-year-old barrels respectively, before blending. The result is magnificent, with aromas of green apple, acacia, grapefruit, lemongrass, and honeysuckle. The mouthfeel is harmonious and mineral, with a flinty character to it. The finish is long and elegant, making this wine an exceptional match for powerful cheeses, fish, roasted duck, and even fruit-based desserts.
