An exceptional, low-intervention white wine crafted from 100% Semillon by Canopus, with an ultra-limited production of only 600 bottles from the organic plots of El Cepillo. Inspired by Stravinsky's suite "Five Easy Pieces," this 2025 vintage flawlessly captures a beautiful harmony between profound depth and approachable friendliness. Fermented with ambient yeasts and aged for three months on its lees in concrete eggs, it achieves a remarkably smooth, velvety texture and complex mid-palate. The nose opens with a delicate, linear bouquet of fresh white peach, citrus, and linden blossoms, leading into a beautifully balanced, full-bodied palate driven by a sharp, crisp acidity and a long, dry, food-friendly finish.
